Abstract

The article presents a comprehensive approach to designing an innovative mobile coffee shop, the key feature of which is full resource autonomy achieved through the use of renewable energy sources. The relevance of the study is driven by the steady growth of the coffee shop market in Ukraine amidst increasing demand for eco-friendly services, as well as the need to solve the acute problem of mobile points of sale depending on stationary power grids or using noisy fuel generators that cause discomfort. The aim of the work is the development and detailed techno-economic justification of a business model for an autonomous establishment capable of operating in recreational areas without harming the environment. The study involves an analysis of market trends and a strategic SWOT analysis, which allowed identifying the project's strengths (autonomy, mobility, eco-friendliness) and mitigating threats that arise during operation. Based on this, a concept for the establishment was formed, including ergonomic zoning of the trailer's limited space, a "Lean" approach to organizing the barista's workplace, and a marketing strategy with a unique selling proposition. The central focus of the work is the technical justification of the autonomous energy supply system. A hybrid energy supply model combining solar panels, wind generators, and energy storage systems is proposed and calculated. Energy balance calculations demonstrate that the system is capable of generating approximately 42.0 kWh/day with a peak consumption of 13.9 kWh/day, creating a significant power reserve for the establishment's uninterrupted operation. The economic part of the research contains a calculation of the project budget (initial investments – 1.2 million UAH) and a forecast of financial results. The calculated payback period of 6–7 months confirms the high investment attractiveness and profitability of the developed model in current economic conditions.
